/&gt;optional miezul de la 10 nuci&lt;br /&gt;&lt;br /&gt;se pun pe foc zaharul cu cacao si cu laptele, se lasa sa dea 2-3 clocote se adauga margarina si dupa alte 2-3 clocote se retine din compozitie o cana aproape plina pentru glazura si restul se raceste.&lt;br /&gt;In oala se pun galbenusurile intregi, faina, praful de copt, albusul batut spuma si alte arome( coaja de lamaie, esenta de vanilie etc)&lt;br /&gt;se toarna intr-o tava dupa omogenizare( tava a fost unsa cu unt si tapetatata cu faina) si se tine la cuptor 5-10 minute cu focul tare apoi se micsoreaza focul si se mai tine cam 20 minute, se incearca cu scobitoarea.&lt;br /&gt;se scoate tava, se inteapa des cu un betisor si se toarna glazura si deasupra nucile sfaramate.&lt;br /&gt;se lasa la racit si se Se pune in oala sub presiune cu apa cat sa o acopere si se lasa 10 minute din momentul in care se pune capacul si butonasul rosu se ridica (sau depinde de oala...). Se scoate apoi caracatita si se clateste(se arunca apa in care a fiert). Se curata cepele mici si se gauresc cu o tepusa ca sa nu se desfaca la fierbere. Se pun in oala impreuna cu caracatita, uleiul, vinul, frunzele de dafin, scortisoara, cuisoarele, sarea si sucul de rosii.Se inchide iar oala si se lasa 15 minute din momentul in care se pune capacul si se ridica butonasul rosu. In 250 de ml lapte se adauga zaharul, se amesteca si se lasa sa se raceasca. Cu 250 ml de lapte clocotit se amesteca 4 linguri de faina cernuta proaspat (separat de faina pentru framintat). Se freaca drojdie de bere cit o nuca cu o lingura de zahar, se pune pasta obtinuta peste faina oparita, se amesteca si se lasa pe marginea plitei la dospit. Galbenusurile, peste care s-a pus sare, se pun peste faina, se adauga maiaua crescuta si se incepe framintatul. Se pune laptele caldut peste faina, se amesteca intii bine ouale in aluat, se framinta un sfert de ora, dupa care se adauga ulei pus putin cite putin si untura de porc proaspata. Se framinta o ora, adunind aluatul spre centrul vasului de framintat. Se lucreaza la temperatura ridicata si se framinta cel putin trei sferturi de ora. Este gata atunci cind aluatul face basici. Ca aroma, pentru cozonac se foloseste cu precadere coaja de lamiie sau de portocala rasa, romul sau esenta de vanilie. Aroma se adauga in lapte, inainte de a incepe framintatul. Cit aluatul sta la dospit, acoperit cu un prosop curat, pe marginea plitei calde, se trec nucile prin masina de tocat, se amesteca intr-un vas adinc cu cacao cernuta proaspat, cu trei linguri de zahar tos, cu stafide si doua linguri de rom.Amestecul se intinde pe foaia de aluat pusa pe planseta unsa cu grasime. Se ruleaza foaia de aluat ca un sul si se pune intr-o tava unsa cu grasime. Se lasa tava pe marginea plitei inca o ora dupa care se coc cozonacii in cuptorul cald, cu focul mic un sfert de ora, ca sa aiba timp sa mai creasca. Se face focul mare, pentru o jumatate de ora si se coc fara sa se inchida ermetic usa cuptorului. Cind se introduc in cuptor, cozonacii se ung cu ou, se presara pe toata suprafata cu zahar tos si se parfumeaza cu putina vanilie. Restul de vanilie se amesteca cu o lingura de zahar farin si se cerne peste cozonacii calzi. Se lasa sa creasca la un loc  calduros. Laptele ramas, zaharul, ouale intregi, galbenusurile, coaja rasa de  lamiie si de portocala, sarea si vanilia se amesteca bine intr-un vas si se  incalzesc putin la foc. Dupa ce a crescut, maiaua se amesteca cu aceasta  compozitie. Se incepe framintatul, adaugind faina, putin cite putin.  Concomitent, se bat si cele 4 albusuri si se adauga la aluat. Pe toata perioada  framintarii, aluatul se bate foarte bine pina ce face basicute. Cind se  considera ca aluatul este destul de framintat, se adauga untul putin incalzit,  framintind continuu, apoi se adauga stafidele. Aluatul se lasa sa creasca  intr-un loc cald. Vasul se acopera cu un prosop cald. In timp ce aluatul creste,  se ung formele (de obicei inalte) cu unt si se presara cu zaharul  tos.&lt;/span&gt;&lt;/p&gt; &lt;p style="margin-left: 25px;" align="left"&gt;&lt;span style="font-family:Arial;"&gt;Dupa ce a crescut,  aluatul se proportioneaza si, apoi se pune in forme in asa fel, incit sa nu  depaseasca 1/2 din forma. Se lasa la crescut in forme: in incapere nu trebuie sa  fie curenti reci, ci caldura constanta. Cind aluatul este crescut umplind trei  sferturi din forma, cozonacii se ung cu ou si se presara cu zahar cubic  sfarimat.&lt;/span&gt;&lt;/p&gt; &lt;p style="margin-left: 25px;" align="left"&gt;&lt;span style="font-family:Arial;"&gt;Formele se introduc in  cuptor. In el se pun taritele de griu si malaiul. Se adauga hustele (tarite si malai ramasede la alt lot de bors) pentru fermentatia lactica, sau drojdia de bere. Peste aceasta se toarna apa fierbinte sau clocotita pina ce se umple vasul, care se va pastra la loc cald.&lt;/span&gt;&lt;/p&gt;  &lt;p style="margin-left: 25px;" align="left"&gt;&lt;span style="font-family:Arial;"&gt;Dupa racire, se adauga o lamiie cu coaja cu tot, taiata in felii, impreuna cu 2-3 feliute de paine neagra.In timpul fermentatiei, borsul de amesteca cu o lingura de lemn cu coada lunga, cam de doua ori pe zi (dimineata si seara). Se gusta din cind in cind si daca este destul de acru, se pune intr-un loc rece sa se limpezeasca. Se scurge borsul limpede, se pune in sticle si se pastreaza la loc racoros. Se pastreaza hustele (ceea ce a ramas in vas dupa ce s-a pus borsul in sticle) la rece, in acelasi vas. Cand s-a terminat borsul in sticle, se toarna apa fiarta in vas peste huste sa se limpezeasca; apoi borsul se toarna in sticle. Se amesteca pana se omogenizeaza bine si apoi se intinde pe folie .La crema procedam in felul urmator:Cele 3 galbenusuri de ou impreuna cu zaharul si zaharul vanilat se fierbe pe baie de aburi pana se ingroasa. Se lasa la racit si apoi adaugam 125 gr rama si omogenizam cu mixerul.Peste compozitia de nuca intinsa pe folie intindem si crema astfel obtinuta. Se poate presara cu visine ,stafide sau nuci si se ruleaza strans.Se da la rece pana a doua zi.P.S. eu am facut si varianta cu nuca de cocos. Am folosit 250 gr nuca de cocos iar restul de ingrediente le-am dublat. In jumatatea de crema pe care am folosit-o la rulada cu cocos am pus o lingura cacao.
